RAMEN NOODLE PANCAKES
1 package ramen preferably oriental flavor
1/4 packet of oriental seasoning
1 large egg
1 carrot shredded
1 tablespoon shredded pickled ginger
cook ramen for 2 min. in boiling water, drain ramen then beat egg with all other ingredients and mix in ramen. pour a thin layer of olive oil or veg oil in a pan on medium-high heat. when pan is hot pour ramen/egg mixture in and spread out with your spatula. fry for about 5-10 min. or until it’s solid enough on the bottom to flip it. flip it and fry for the same amount of time. put on plate and cut into wedges. mix dipping sauce (ingredients below).
SAUCE
amount is to your taste but mostly mayo, then sriracha, tamari (or soy sauce)and lemon

Mindy’s Granola Recipe

1 cup pumpkin seads
1 1/2 cup slivered almonds
1 cup coconut chips
1/2 cup brown sugar
1 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon cardamom
1 teaspoon whole fennel seed
1/2 cup olive oil
3/4 cup pure maple syrup
3/4 cup quartered figs or sliced apricot
preheat oven to 300˚. mix everything but maple, oil and fruit until well combined. add oil and maple and mix thoroughly. put granola in a large, shallow pan (one that it’ll be easy to mix the granola in). cook at 300˚ for 45 minutes, string ever 10 minutes. take out of the oven and cool. once cool add dried fruit and put in an air tight container.

Mindy’s “husband famous” Guacamole

This recipe is for 2 people who just wanna eat some guac and chips.

1 large haas avocado

1/4 tsp cumin

1/2 a lime

chipotle to taste

salt to taste

mush up the avocado in a medium bowl. add the cumin and squeeze the lime into the bowl. only squeeze out about 1/3-1/2 of the liquid and adjust as needed when you taste the guac. add some salt and a few shakes of chipotle and mix everything together. once well blended, taste and add more of whatever you like.

note: i made this recipe because i didn’t want to buy a huge bunch of cilantro just to make a little guac. and it turned out really well.

Beans with duck, bacon, mushrooms and spices

1 lb bag of cannellini beans soaked over night
2-4 duck thigh/leg quarters
3 gloves garlic sliced
1 large onion chopped
1/2 lb shiitake mushrooms chopped with stems
1 heaping tb cumin
1 1/2 heaping tb paprika 
1/2 tsp red pepper flakes
1/2 tsp chipotle
1/2-1 carton of chicken broth
1 large can crushed tomatoes (nothing added, no basil, no bull shit)
1/2 package thick cut bacon chopped
2-3 tbl olive oil

heat up oil in a big pot with the bacon. when the bacon is mostly cooked add the duck and brown on all sides. once duck has browned add cumin, paprika, chipotle and red pepper flakes. stir well and then add onions and garlic. melt the onions down a bit and then add mushrooms and crushed tomatoes. cook for about 15 minutes then add beans along with their soak water and the chicken broth. bring to a boil and then turn down to simmer. cooking time will vary, at least 1.5 hours, but cook until beans are to your liking and duck is almost falling off the bone.





notes: this is the best recipe i’ve come up with in a very long time, it’s seriously incredible! i only used 2 leg quarters, so there wasn’t too much fat from the duck, you might want to skim off some of the fat if you use more. you could also add sausage or use chicken instead of duck but it will change the flavor. also the amount of chipotle is a guess as i thought to put it in last min. and just shook it in instead of measuring it.
